I was a late arrival to the sandwich party this year, so by the time I got there everyone was full. Therefore few people got to experience the grilled apple-brie sandwich. For those that missed it, try it at home. I got the idea from a children's cookbook I had when I was a kid, which had a recipe for a sandwich involving buttered bread and an apple slice, grilled. I forgot the rest, but ad-libbed:
Grilled Apple Brie Sandwich:
*Oatmeal Walnut Bread (from the Fort Greene Farmer's Market if you live here)
*Apple (preferably a softer Mac type apple, not a storage apple like Granny Smith which will stay crisp when cooked)
*Brie (whatever kind floats your boat)
*Butter
Generously butter a skillet. Peel and core the apple and cut into thin round pieces. Cut a hole in the center of the bread. Pop an apple slice into the hole (make sure it fits snugly). Drop into the hot buttered pan. Grill until golden brown, then flip and slather with brie while the other side toasts.
Enjoy! But don't try to cut in half like I did or the apple piece will fall out.
